Patrick Cooney knows Irish Spirits. He and his brother Nicholas purchased Gleeson — building the beverage-maker through organic growth and acquisitions to a nine-figure Irish giant. Patrick sold Gleeson in 2012 and has turned the family’s attention toward a new legacy — the Na Cuana beverage company and the Boann Distillery. It’s a true family business with his wife Marie, his daughters Sally-Anne and Celestine, and their sons Peter, Patrick, and James. The Whistler Imperial Stout Cask Finish Irish Whiskey is a story of a barrel journey. The folks at Boann Distillery use ex-Bourbon casks to age their Single Malts. They take those casks and use it to mature Imperial Stout. Then, the Stout is removed and those same casks are used to finish their signature Irish Whiskey of malt and grain Whiskies. At each step the wood delivers flavors, but also gains flavors — nuances and notes and complexity abound.
