Seven Stills Slo Flo Whiskey

First there was Slo Flo Pilsner. Abracadabra! Now there’s Slo Flo Whiskey.

We all see the Germans for the masters of Beer that they are. What’s lesser known is that they’ve been distilling their lager for ages, calling it “Bierschnapps”. Making booze from brewskis makes sense, since they both start with fermenting grain before their paths diverge. Now ― in the wake of the craft Beer revolution ― this practice is taking America by storm. The guys at Seven Stills are doing just that ― turning craft Beer into craft Whiskey. If you ask us, that’s almost as awesome as turning water into Wine. The founder Tim Obert has been at it since 2016, collaborating with craft-brewing heavy-hitters from his base of operations in Bayview, San Francisco, expanding considerably along the way.

They go about it two ways, either using their own Beer or ones from established craft wizards. The Slo Flo Whiskey falls into the first category. They poured their easy-drinking flagship Czech-style Pilsner into a 300-gallon pot still, then aged the distillate for 12 months in charred new American oak. As you can imagine, it’s a limited affair with a grand total of 540 94-proof bottles produced. It’s also totally unique, with the saaz hops influence contributing those delicious floral notes.
