The Redwood Empire (the woods, not the Whiskey) is a scarcely populated stretch of land from San Francisco to Humboldt Bay that is still dominated by nature. At the heart of the woods, there sits Redwood Empire Distillery, a small distillery that has become a part of that harmony, rather than its disruptor. Distilling in a single pass, they are preserving both water and energy, sharing their mash with local farmers for food for livestock, and they are planting a tree for each bottle sold. Named after the 14th largest tree on the planet, the Pipe Dream tree rises 367 feet from the ancient forest floor and is more than 1300 years old. This ancient tree has a larger-than-life feel to it, and so does the bottle. With a rich and complex mouthful, this Pipe Dream truly stands out – pun intended. Made from a mashbill of 75% Corn, 21% raw Rye, and 4% Malted Barley, this blend was made from 4 to 12-year-old barrels that were sourced from 4 different states. A very enjoyable bottle that is best drunk neat or on the rocks. Bottled at 90 proof.
