Craft distilleries used to be popular in Chicago in the times and reigns of Big Al, but after the prohibition they were all shut down. It wasn’t until 2008, when the Koval distillery re-ignited the trade in Chicago. It’s one of the first small batch distilleries in Chicago, and one of the leading craft distilleries in the US. It was founded in 2008 by a young couple, Robert and Sonat, who chose to follow their hearts, instead of a logical career path based on their university degrees. Growing up Robert, who lived near Salzburg, Austria, was immersed in a culture of small batch distilling, which he effectively integrated into Koval and all of its products. The distillery supports sustainable agriculture by producing only organic and kosher spirits and also make everything themselves – from mashing of the grains to the bottling. No outsourcing.
With their approach they declared their grain-to-bottle mentality which means that every step of the production is carefully planned and exists only because it is the only acceptable way to do the things as they want them to be. This mentality brought them numerous awards and they are recognized for being one of America’s top independent, small-batch spirit producers.
Koval Single Barrel Millet Whiskey is aged in American oak casks for three years. This kosher and certified organic Whiskey is a real treat and a must-try for anybody who is up for something different.
