Made in the historic neighborhood of Dogpatch in San Francisco, California, Glyph is the world’s first molecular Spirit. Forget about the rule book of distilling and aging, these guys go straight to the root to make their Whiskey. The root being literal molecules. After they map out the exact flavor profile they desire, they source molecules directly from plants and yeasts: esters from fruit, sugars from cane and corn, and acids from citrus and wood. This is called note-by-note production. Hand-bottling their Spirits in small batches, Glyph Spirits are not just insanely delicious, they are also made with 94% less water and 92% less agricultural land use than your traditional Whiskey. Plus, they emit 87% less CO₂ emissions. Great new for our taste buds AND our planet.
Like all their Spirits, Glyph Spice is made with the note-by-note production method. This molecular Spirit was inspired by the good ol’ American Bourbon. Expect to be greeted by aromas of bananas and cinnamon bark that lead into a medium-body, bursting with cherry, oak, spice, toffee, and caramel undertones. Dangerously drinkable, this one, it ends on a savory and earthy note. You’d never have guessed this crisp Spirit was not produced in the time-honored, traditional way – or maybe you would have because there’s a different kind of quality to it. What’s that, it’s suspiciously perfect? We don’t know about that but we do know it won Double Gold and Consumers Choice Award at the 2022 SIP Awards.
