With 2 decades of experience in the Spirit industry, Danny Saltman was on the lookout for something new on the market. Something really special one couldn’t find anywhere else. This is how the independent bottler DS Tayman was born. Saltman travelled all over Scotland to match select rare Scotch Whiskies of Scotland with hand-picked casks. Known for only bottling malt Whisky that’s aged in single casks, DS Tayman bottlings are pretty darn limited. Then, these rare Whiskies get a round of finishing in selected Wine or Port casks for that final unique touch.

Caol Ila 12YO comes from Caol Ila, pronounced as “Cull Ee-la”, a small Islay distillery that was established in 1846. After many changes of hands, it’s now part of Diageo. They’re known for their light, nuanced and delicate Islay single malts and this intriguing dram is no exception. finished in ex-red Wine casks from the Israeli Flam Winery, it’s 100% Kosher and 100% delicious with a complex palate of cappuccino foam flavors coupled with rhubarb, custard and a sprinkling of gentle sea salt.
