Bushmills is one of the most popular and enduring Irish Whiskeys. Hugh Anderson registered the company in 1784 in the town of Bushmills and, after a few fits and starts, they have been in continuous operation and growing since 1885. Jose Cuervo purchased the Old Bushmills Distillery from Diageo in 2014, but those corporate blokes know to stay out of the way of Irishman crafting their Whiskey. Bushmills currently has six Whiskeys in their core line-up in addition to special editions and releases.
Bushmills 21 YO Three Wood is the top-off-the-line in their core range. It is, indeed, a Single Malt Irish — which is VERY hard to find these days and reason-enough to try it right there. And like all self-respecting Irish Whiskeys, it is triple distilled before being aged 19 years in a combination of Oloroso Sherry and ex-Bourbon casks. But that’s not enough, because then this limited edition is transferred to Madeira casks for two more years of finishing. If all that didn’t get your attention, then there’s something seriously wrong with you.

Prominently pressed into the glass of each bottle of Bushmills Irish Whiskey is the date “1608.” But, that’s not really when they started making Whiskey. The original land-owner — a Sir Thomas Phillips — received an official “license” from King James I to distill in 1608, but the Bushmills distillery was not built until 1784.
