All Points West Distillery was founded by Gil Spaier. An architect and building renovator by training, he took up baking as a hobby. Baking is a function of yeast. That led to milling his own grain. Handling yeast and milling his own grains led to home-brewing. And home-brewing led him to distillation, founding his passion project in 2017. He had the idea to use traditional Irish pot-still methods on a barley and corn Spirit. In his second year his first Whiskey was awarded the Gold Medal AND “Whiskey of the Year” from the USA Spirit Rating Competition.
All Points West Malt and Grain Pot Still Whiskey is THE Gold Medal winning “Whiskey of the Year” that fulfilled Gil’s vision. It is a combination of Irish and German malted barley and corn distilled in a traditional Irish-style single pot-still. It’s been matured in virgin American oak casks and brought to proof with the famously soft Appalachian mountain spring water. The style is more floral than Bourbon and sweeter than Single Malt.
Smartass Corner:
Most American Whiskey production in the 1800s was for export and this barley/corn style of Whiskey was actually quite popular in the United Kingdom — at the time the biggest overseas market. But in 1846 the UK changed the “Corn Laws” to protect domestic Whisky markets.
